Some of you might be wondering "What exactly is Country Ham".  Country hams are slow cured with salt, cane sugar, and brown sugar. They are hand rubbed and placed into a curing room within oak bins for a total of 40-45 days. The product is then equalized allowing for the cure mixture to equalize through the ham to give it a consistent delicious flavor. After Equalization the hams are hung in the drying/aging room for an additional 25 to 35 days. This is truly the old fashioned way of curing hams, giving it a southern flavor that is hard to beat.
