This Artichoke Relish retains the tangy crunchy quality of the Jerusalem Artichokes and mixes them with the sweet spicy taste of peppers and onions. This makes a wonderful relish on sandwiches, crackers, vegetables, or just by the spoonful. Try it on Hot Dogs for a wonderful spicy treat. Stir a bit of relish into potato salad, or into the yolks of deviled eggs. This also makes a wonderful addition to chicken and tuna salad sandwiches.
Jerusalem artichokes are the sweet, edible tubers of native North American sunflowers that were commonly eaten by North American Indians, and then settlers. This is not the artichokes that you would use in Artichoke Dip served in restaurants.
